Cook Once, Eat Three Times!

Welcome to another In the Kitchen post where I’m taking the anxiety and worry out of the kitchen and showing you how to make real food happen! Because let’s get real, life is already complicated enough without having to worry about what we need to be eating.

This video shows how investing in quick prep work and some hands-off slow cooking for dinner one night will give you TWO additional meals for the next two nights!

#1. Roast that Chicken 
Roasting chicken, or any piece of meat really, one night can set you up for easy meals throughout the week. I use this recipe from Nourishing Traditions to make a simple roasted chicken. I really believe everyone should know how to roast a chicken. PLUS- when the oven is already on use this as an opportunity to throw other food in there to cook too! Throw together a quick side salad with this and you’re done. I love making a dressing out of 1/2 cup olive or avocado oil, 2 Tbsp apple cider vinegar, salt, pepper, and dried herbs. Shake this is a glass jar and you’re ready to roll.

#2. Chipotle-Chicken Bowl
Begin with vegetables as your base. Make sure to enjoy some starchy vegetables like sweet potatoes or if you prefer a grain go ahead and use some rice! Add in that leftover chicken and add toppings to your desire. Think about what you like (or don’t like) at a restaurant like Chipotle and do it yourself at home!

#3. Chicken Soup
Start with your broth of choice, I love this recipe. By using a bone broth like that one you are taking an amazing step to add in gut-healing nutrients to your diet and boost up the nutrient content of the soup as a whole. Saute up some celery, onions, and carrots as a base and add that chicken in. That’s as simple as it has to be. Again, use this to customize that meal to your liking. I personally love adding some rice or rice noodles in too!

#4. Bonus Dessert Drink: Adrenal Healing Creamsicle
Since your next two meals are done, you have a little extra time to treat yourself! Try my favorite creamsicle dessert drink!

  • Mix: 2 ounces fresh pressed orange juice, 2 tablespoons organic raw cream (or coconut cream for vegans/non-dairy), 2 scoops pasture-raised collagen, and a pinch of Himalayan pink salt.
  • Shake up and serve in a wine glass… because why not?!
